- 油脂在储存过程中,不可避免地会受空气、水、光照、热、微生物及金属离子等影响,随着储存时间延长,油脂会存在不同程度的氧化和酸败,导致过氧化值和酸价超标.近年来,人们对食品安全的认识越来越高.食用油储存安全、防止氧化是现代生活中的一个重要问题,传统的储存方法很难解决这个问题.因此,新的技术被提出,其中包括二氧化碳隔氧储存技术.探讨二氧化碳隔氧储存技术的原理,以及食用油在这一技术中的应用研究,为食用油的安全储存提供技术支持.
During the storage process,oils are inevitably subjected to influences such as air,water,light,heat,microorganisms,and metal ions.With prolonged storage time,oils undergo varying degrees of oxidation and rancidity,leading to excessive peroxide value and acid value.In recent years,there has been an increasing awareness of food safety.Ensuring the safety of edible oil storage and preventing oxidation has become a significant concern in modern life.Traditional storage methods have proven insufficient in addressing this issue.Consequently,new technologies have been proposed,including carbon dioxide barrier storage technology.Explore the principles of carbon dioxide oxygen-barrier storage technology and its application research in edible oil,aiming to provide technical support for the safe storage of edible oils.
